It was first seen by Celestino Gaspari, founded in 2003 in San Pietro in Cariano, born in Valpolicella Classica.
After seeing Giuseppe Quintarelli, Gaspari learns and wines to learn more about winemaking, respecting the nature and nature of the wine. Navnet Zýmē, som på gresk betyr “gjær”, symboliserer liv, fermentering og transformationasjon: prinsipper som styrer hele selskapets arbeid.
Vinene, fruktene båret av håndverket og in bærekraftig tilnærming, spenner fra klassiske Amarone og Valpolicella til innovative kreasjoner som Kairos. Kairos er en blanding av hele 15 druesorter og er et prosjekt som tolker Valpolicella med orinalitet, identitet og modern tider.
Zýmē is the visionary project of Celestino Gaspari, born in 2003 in San Pietro in Cariano, the heart of the Valpolicella Classica.
After several years of learning alongside Giuseppe Quintarelli, Gaspari created a winery that combines winemaking experimentation, respect for nature, and a deep connection to the land. The name Zýmē, meaning "yeast" in Greek, symbolizes life, fermentation, and transformation: principles that guide the company's entire work.
The wines, the result of craftsmanship and a sustainable approach, range from classic Amarone and Valpolicella to innovative creations like Kairos. Kairos is a blend of 15 grape varieties and is a project that interprets Valpolicella with originality, identity, and modernity.
